This is a unique – and delicious – way to use up some leftover smoked brisket!

Ingredients:
- Smoked Brisket
- Yellow or White Corn Tortillas with Frying Oil
- Cheese
- Red Onions
- BBQ Sauce
- Jalapeños (optional)
- Baking Sheet
- Non-stick Foil or Parchment Paper
Step 1:
Pre-heat oven to 350 degrees.
Make some tortilla chips out of your yellow or white corn tortillas. I like to make my own chips – but you can certainly use already made tortilla chips. Here is a tutorial for how I make my chips.
Step 2:
Line your baking sheet with some non-stick foil or parchment paper to avoid your nachos sticking to the pan.
Step 3:
Lay out your tortilla chips in a single layer so each chip can equally have the same amount of toppings.
Step 4:
Shred up your smoked brisket if you need to. I used my Kitchen Aid Stand Mixer to do this for me!
Generously layer the brisket over your tortilla chips.
Step 5:
Cut up some red onion and layer it on top of the brisket.
Step 6:
Add your shredded cheese of choice. I used the Mexican blend of cheese which includes Monterey Jack, Cheddar, Queso Quesadilla and Asadero cheeses.
If you don’t want Jalapeños – skip to step 8.
Step 7:
Add your jalapeños (if you want them) to the top of the nachos.
Step 8:
Place the baking sheet with your nachos into the oven and bake for 10 minutes.
Step 9:
After you pull out your nachos from the oven, drizzle a little bit of BBQ sauce over all of the nachos. I really like this Sweet Baby Rays BBQ Sauce, but you can use whatever flavor you like!
