Do you love buffalo chicken wings? This recipe is the next generation chicken tacos and it’s another fan favorite for the wing lovers in your life!
Ingredients:
- Corn Tortillas
- 2 Cups Vegetable Oil
- 2 Lbs Chicken (I used Tenderloins)
- 8 oz Cream Cheese
- ½ Cup Ranch Dressing
- ½ Cup Frank’s Buffalo Wing Sauce
- 1 Cup Mozzarella Cheese
Step 1:
Bring a large pot of water to boil over high heat. Once it comes to a boil, add your chicken and turn down the heat to medium to low. Cook the chicken for about 25-30 minutes or until there is no pink left. (Note: you can also use frozen chicken for this process and it works just the same, however, you’ll need to cook the chicken for ~45 minutes)
Allow your cream cheese to come to room temperature on the counter while you’re prepping and while your chicken cooks.
Step 2:
Make your taco shells. Add the vegetable oil to the small skillet and allow to heat up over medium-high heat.
Add your tortilla and hold slightly bent in half until crispy. Flip over and repeat until it’s done.
Allow to drain on a plate lined with paper towels. Sprinkle a little bit of salt on the shell while it dries.
Repeat for as many tacos as you’re making!
Step 3:
After the chicken is cooked, add your chicken to your KitchenAid mixer with the Paddle attachment and shred chicken. You can also just drain your pot and use a hand mixer, or shred the chicken by hand with a knife and fork.
Step 4:
If you decided to shred your chicken by hand, add the chicken to a mixing bowl. If you shredded your chicken in your mixer, you just add the rest of the ingredients to the mixer.
Add in your cream cheese. I cut mine into little cubes to help it mix easier with the chicken. Mix until fully combined with the chicken.
Step 5:
Add in your buffalo wing sauce, ranch dressing, and mozzarella cheese to the mixture with the cream cheese and chicken and mix well.
Step 6:
Add your mixture to a microwavable safe bowl and microwave for 2 minutes. Mix your chicken mixture and microwave for 1 more minute. This is just to reheat the mixture so it’s warm for your tacos!
Step 7:
Scoop your mixture into your taco shells and add a little bit of ranch dressing to the top. Enjoy!
